Preparation Time:- 2 hr
Serving for 10 people
INGREDIENTS :
For masala 
Cooking oil 1.25 kg
Onion slice 3 kg
Tomato puree (grinded) 
Green chilli paste 75 gm
Ginger garlic paste 175 gm
Coriander powder/dhania powder 75 gm
Turmeric powder/Haldi powder 75 gm
Red chilli powder 50 gm
Garam masala 40 gm
Cumin seeds/jeera 25 gm
Water 1 ltr
Chicken 3.5 kg
Curd/dahi 1 kg
Salt as per taste 
Coriander leaves (chopped) few


For Rice:
Rice (basmati) 3.5 kg (soaked for 1 hr)
Water 
Salt as per taste 


METHOD:
For masala 
Turn on flame and heat cooking pot 
Add oil
Let it heat on high flame 
Add sliced onion 
Fry till golden brown
In another cooking pot 
Add tomato puree, ginger garlic paste, green chilli paste
Add spices (red chilli powder, turmeric powder, coriander powder, garam masala, cumin seeds)
Mix well
Now add this masala in fried onion
Roast it for 5 mins
Add little water 
Roast it
Switch off the flame
Add chicken, curd, salt, chopped coriander leaves
Mix for 5 mins


For Rice:
Turn on flame and heat cooking pot 
Add water, soaked rice, salt
Let it boil for 15 mix
Cook 50% rice
Drain the water
Set aside


For layering:
In marinated chicken, pour 50% rice 
Sprinkle red and green edible cover
Cover with newspaper & cover with a lid
Give dum for 45 mins (do not open before 45 mins)
Open and check it
Mix rice in colour
Once done
Serve hot.
